Escabeche de Verduras (Puerto Rican Root Vegetables in Vinaigrette)

Ingredients:
1 pound malanga, halved
1 pound yuca, halved
1 pound yautia, halved
1 pound batata
1 cup  olive oil
1/2 cup white vinegar
1 bay leaf
1/2 teaspoon black pepper
1 red bell pepper, julienned
1 onion, thinly sliced
2 garlic cloves, minced
salt to taste

Directions:
Boil root vegetables until fork tender.
Simmer half the oil in frying pan with bay leaf, pepper, red pepper, onion, garlic, and
salt for about 5 minutes.
Add vinegar and rest of oil.
Let cool and pour over root vegetables.
Let marinate one hour before serving.
