Amarillos con Queso Parmesano   (Sauteed Yellow Plantains with Parmesan Cheese)

Servings 6

Ingredients:
2 tablespoons butter or margarine
2 tablespoons light olive oil
3 very ripe plantains, peeled and cut into 1/2-inch slices
1/4 cup grated Parmesan cheese   

Directions:
1 Heat the butter and oil in a nonstick skillet. Saute the plantain slices over medium
heat until golden brown. Drain on paper towels and sprinkle the cheese on top.
