Corn Bif Tradicional (Traditional Corned Beef)

Ingredients:
2 yellow plantains
1 cup corn oil
1 tablespoon olive oil
1/4 cup basic recaito
1/2 cup alcaparrado
1-1/2 cups tomato sauce
3/4 cup water or beef stock
2 12-ounce cans corned beef black pepper to taste

Directions:
1 Peel the plantains and cut them into 1/2-inch slices. Heat the corn oil in a large
skillet and fry until golden brown. Drain on paper towels and set aside.
2 Heat the olive oil in a separate skillet. Add the recaito, alcaparrado, tomato sauce,
and water or stock. Cook over medium heat for 5 himutes. Add the corned beef and
black pepper. Cook over medium to low heat for 10 minutes. Add the plantain slices and
cook for 5 minutes more.
